Ocean Prime Introduces Fresh-Caught Columbia River Salmon, Limited Time Offering with Wine Pairing!

WHAT: Ocean Prime announces its newest summer feature — a trip to Oregon’s Willamette Valley by way of salmon and wine! Beginning July 9, Ocean Prime is serving up the season’s first catch of wild salmon from the Columbia River, paired with two Oregon Pinot Noirs — one from Penner Ash ($16/glass; $64/bottle) and one from WillaKenzie Estate ($27 glass/$108/bottle).
The salmon is line-caught and delivered next day to Ocean Prime’s Phoenix location. Buttery and full-flavored with a tender texture, the salmon is served with Oregon forest-mushroom ragout, roasted tomatoes, fennel and toasted garlic reduction, and finished with Dungeness crab salad, shaved fennel, and balsamic tomato vinaigrette ($51).
The balance of the salmon, tomatoes and mushrooms pairs perfectly with the featured Oregon-region Pinot Noirs from Penner Ash, an established Willamette Valley vineyard, and WillaKenzie Estate, an up-and-coming vineyard with bright, complex wines. Being an ideal summertime red, these wines are light enough for a hot Phoenix night, yet still possess the intricacy to enhance the flavors of the dish.
